Last weekend turned out to be a healthy one in Bengaluru with Fairfield by Marriott hosting specially conceptualized Master Classes in both its properties. MacroTraveller had the pleasure of attending an Exclusive MasterClass at the Fairfield Marriott Bengaluru with celebrity Chef Michael Swamy and their Head Chef Aniket Das. Both master classes embodied the brand’s philosophy of healthy living with great food, perfectly!
The afternoon session began with welcome drink ‘Rehman Ki Sorbet’ along with that Executive Chef Sudhir Nair & Culinary Master Chef Michael Swamy, preparing healthy creations from Chef Nair’s native region Kerala. Whereas Chef Michael Swamy recreated the Keralan magic as he put together a delicious lamb encrusted curry, a traditional desert was created by Chef Sudhir in the form of Parripu Pradhaman. The fellow food bloggers enjoyed non-veg curry, and they were delighted.
Besides to this, both the chefs combined their expertise and co-created a healthy version of ‘Akki Roti’ using local ingredients.
The next MasterClass saw Chef Swamy along with the Executive Chef Aniket Das track back to their childhood by rustling up some flavors from the Malvan (Sindhudurg of Maharashtra) region. Chef Aniket Das recreated his favorite childhood memory by preparing the great Moong Sprout Ussal while Chef Michael Swamy added his unique touch to the Malvani aromas as he made the ‘Chinchoni Curry.’
Then the both chefs came together to prepare the Upma with a twist of Ragi Semiya and the taste of Maharashtra and Bengaluru on the same plate ‘Ragi Upma’ using local ingredients.
The food bloggers and guests enjoyed the tasting sessions and the interaction with the chefs. During the Q&A session, they shared how the big hotels or chefs are trying to bring back the authentic flavors in the food with the twist of healthiness.
Star Chef Michael Swamy added, “It was great to co-host the Master Class with both the chefs.
